Is Trout a Salmon?
Steelhead Trout were historically called Steelhead Salmon, and are part of the Salmonidae family. Salmon and Trout have similarities. They both are born in freshwater, live their lives in the ocean, and return to freshwater to spawn. Basically it's a Rainbow Trout that lives in the ocean instead of freshwater lakes.
I usually buy frozen Wild Steelhead Trout fillets, either from Norway or from the Western Canada. I defrost in the fridge overnight and use it the next day. Fresh fish is best, but I'm a realist. You can't always find or afford fresh fish, and nutritionally it's not any different. Unless you're a fisherman, then you'll love this fresh fish recipe.
What Cedar do I use for Cedar Plank Trout?
Cooking fish on a cedar plank has been made by Native Americans of the Pacific Northwest for hundreds of years, maybe thousands. The cedar planks must be free of chemicals, coatings or treatments as it will enter your food via the cooking process. So don't wander over to your local Home Depot and grab any piece of cedar. I always buy my bbq cedar planks, usually from a barbecue store, or even on Amazon. I don't trust the cedar from a construction site, or from a hardware store wood section, as I don't know if the cedar has been treated or not.
Why go through all this fuss? Because of the flavor! Cedar adds a wonderful smokey flavor to the steelhead trout or salmon. This recipe can be made as a trout fillet recipe or with a salmon fillet. I put the cedar plank on the bbq over indirect heat, meaning the burner underneath is turned off. Keep the other burners on.
Are Cedar Planks Reusable?
The cedar planks can be re-used, even if they are burnt on the edges. Just clean the plank with soap and water, and allow to dry. When you're ready to use it again, just follow the process and allow to soak before using.
If you don't have a cedar plank, or just want to grill in your oven, just place the trout fillet on parchment paper on a baking sheet and follow the rest of the instructions. When using a salmon fillet, it may take a few minutes longer to cook as salmon fillets are usually thicker and will take longer to cook.
How to Cook Steelhead Trout
This is one of the easiest Steelhead trout recipes out there, and you probably have all the ingredients already in your kitchen. Ok, maybe not the cedar, but you could also bake this in the oven, or on a bbq grill. But without the wooden planks, where's the fun in that? Food always tastes better with a story. It's a perfect summer recipe, my favorite trout recipe with dill (I love fresh dill).
After soaking the cedar plank, pop it on the bbq for a minute for excess water to dry off. Then place the dressed trout on the drier side of the plank. The bbq should be heated to about 300°F/150°C, closed to keep heat in. This takes about 15 minutes to cook, or until the salmon starts to flake easily. In the same way, you can bake trout in the oven, no bbq required. If you don't have cedar planks, then use a baking tray. However, cedar adds a wonderful aroma to your fish!
Can I Use Salmon?
Yes! Salmon fillets are probably easily found in your grocery store, fresh or frozen. Make this recipe a Cedar Plank Salmon recipe. The taste difference is minimal, and you'll love this recipe!

Ingredients
- Steelhead Trout fillet boneless skin-on
- salt
- 1 tablespoon honey
- fresh dill chopped
- lemon slices
- cedar plank
Instructions
- Soak the cedar plank for about 2 hours before you are ready to use.
- Pat the trout with a paper towel until dry. Salt the salmon. Spread a light layer of honey over the trout fillet. Generously sprinkle the chopped dill over the trout. Top with lemon slices.
- Place the cedar plank on a bbq grill for about 1 minute, to dry the excess water. Place the dressed trout on the drier side of the cedar plank. Place the cedar plank trout fillet onto the bbq on medium heat around 300°F/150°C. Cook for about 15 minutes until the trout flakes easily. Keep a spray bottle handy to put out any fires if the cedar flares up. Don't overcook! Serve with vegetables.
