- Cedar Plank - The cedar planks must be free of chemicals, coatings or treatments as it will enter your food via the cooking process. So don't wander over to your local Home Depot and grab any piece of cedar. I always buy my bbq cedar planks, usually from a barbecue store, or even on Amazon.
How to Cook Steelhead Trout
This is one of the easiest Steelhead trout recipes out there, and you probably have all the ingredients already in your kitchen. Ok, maybe not the cedar, but it adds a gentle flavor and wonderful aroma to your kitchen.
- Soak the Plank - fill your sink with water and soak the plank for 2-4 hours. Can add weights on it to keep it submerged under water.
- Prepare Salmon - pat trout with a paper towel until dry. Season with salt. Spread a light layer of honey over the trout fillet. Generously sprinkle the chopped dill over the trout. Top with lemon slices.
- Prepare Bbq - turn on bbq and maintain heat at 300°F (150°C)
- Prepare Plank - place cedar plank on a bbq grill for about 1 minute, to dry the excess water. When cooking, keep a spray bottle handy to put out any fires if the cedar flares up.
- Cook - place the dressed trout, skin side down, on the drier side of the cedar plank and put on the bbq on medium heat around 300°F/150°C. Cook for about 15-20 minutes until the trout flakes easily. Don't overcook, internal temp should be 145°F (63°C).
- Serve - enjoy with your favorite grilled vegetables and carbs.

- Prepare Tray - line a baking tray with parchment paper.
- Prepare Salmon - pat trout with a paper towel until dry. Season with salt. Spread a light layer of honey over the trout fillet. Generously sprinkle the chopped dill over the trout. Top with lemon slices.
- Preheat Oven - heat oven to 300°F (150°C) fan forced

- Foil in Oven - some people like to cover fish in foil when baking in oven. That is an option, however I love how the honey caramelizes the lemon as it cooks, leaving a tasty candied lemon. Covering with foil won't have the same effect.
- Flavor the Plank - add white wine, beer or cider when soaking the plank to add extra flavor.
- Extra Planks - one plank won't be enough for your fish fillet, always buy 2 planks, and cut fish in half to fit

Can I Substitute Trout with Salmon?
Yes! Salmon fillets are probably easily found in your grocery store, fresh or frozen. When using a salmon fillet, it may take a few minutes longer to cook as salmon fillets are usually thicker and need more time to cook.
Are Cedar Planks Reusable?
Yes! They can be re-used, even if they are burnt on the edges. Just clean the plank with soap and water, and allow to dry. When you're ready to use it again, just follow the process and allow to soak before re-using.
Storage and Reheating
- Fridge - allow to cool and place in an airtight container. Refrigerate and enjoy within 3 days
- Freezer - allow to cool and wrap in cling wrap, and then foil. Place in a Ziploc bag and enjoy within 3 months.
- Reheating in Oven - heat oven to 275°F (135°C), low and slow no minimise drying out. Place trout on baking sheet and gently heat for 15-20 minutes.
- Reheating in Air Fryer - for a crispier finish, heat Air Fryer to 360°F (180°C). Place trout skin side down and heat for 3-4 minutes until heated through. Line basket with parchment paper to prevent honey glaze from sticking.
