This Grilled Squash and Zucchini recipe, is one of the easiest sides you can grill this summer, perfect with your next bbq. Brushed with Olive Oil and Montreal Steak Spice, these thin strips of Grilled Zucchini will pack a flavor punch. How To Make Grilled Zucchini
- Prepare Squash or Zucchini - slice lengthways, into about 4 slabs per Zucchini (about ¼" thin).
- Season - drizzle with Olive Oil and toss with Montreal Steak Spice until it's completely covered.
- Grill - heat grill on high. Place Zucchini on grill and cook for about 2 minutes, until chargrill marks form. Flip and cook for another 2-3 minutes.
- Serve - remove from bbq grill and squeeze the juice of half a lemon. Serve immediately.

- Balsamic Glaze - drizzle with a sweet and tangy Balsamic reduction over the Grilled Zucchini Strips before serving
- Zucchini Parmesan - sprinkle Grated Parmesan over the hot Zucchini strips, allowing cheese to slightly melt before serving
- Greek Zucchini - inspired by the flavors or Greece, by adding Crumbled Feta and sliced Kalamata olives, creamy and tangy

- Young Zucchini - using Zucchini you find in supermarkets, usually 6-8 inches long. In Farmer's Markets they sell large ones, perfect for making Stuffed Zucchini, but those are too large for this recipe.
- Seasoning Substitute - try using Cajun Spice, Italian Seasoning with Salt and Pepper, your favorite Seasoning Salt, or even Za'atar or Dukkah!
- Summer Squash - not only for Italian Zucchini, but perfect for Grilled Squash. Try Yellow Squash, Pattypan Squash, Zephyr Squash
- Even Slicing - using similar sized Zucchini to ensure the sliced pieces are cut the same time. This ensure even cooking time. You can slice into thicker pieces, but increase your cooking time
- Don't Overcook! - Pull them off when they are still slightly firm, otherwise they will be mushy or soggy. That means don't make this ahead of time. Best served right away after grilling

Marinade for Grilled Zucchini
This easy Zucchini doesn't need a marinade. Drizzle the sliced Zucchinis with Extra Virgin Olive Oil and sprinkle your favorite Seasoning Salt. I always have Montreal Steak Spice on hand, easy and tasty. You can leave this to marinate for 15 minutes if you like, or just grill them right away. It only takes a few minutes to grill per side, and your zucchinis are done!

Absolutely! Use a hot Cast Iron Grill Pan over medium high heat. This will leave nice grill marks and still allow great flavor. Perfect to enjoy year round without a bbq. Highlight the grill lines, this makes it more appetizing when serving.
