    Garlic Parmesan Broccoli

    Garlic Parmesan Broccoli is an easy broccoli side dish that your whole family will love. Traditional oven roasted or with easy air fryer instructions, you'll want to make this healthy side again, perfect with Osso Bucco.

    I think that most people dislike the traditional boiled or steamed vegetables. It's almost my mission to make vegetables great again. 🤣 We often eat Butter Fried Peas as a side dish, and my Roasted Broccoli with Garlic and Soy Sauce is another family favorite. Healthy vegetables don't have to taste terrible!

    Is Broccoli Good For You?

    Broccoli is very healthy to eat, some call it one of the world’s healthiest foods. Full of vitamin K, vitamin C, folate, calcium and more. Broccoli is also high in fiber. Broccoli doesn't have to taste bad. There are tastier and healthier ways to eat broccoli.

    Ingredients for Garlic Parmesan Broccoli

    It's really easy to prepare roasted garlicky Parmesan Broccoli! Here's what you'll need:

    • broccoli florets - 2 small broccoli heads
    • garlic cloves - fresh garlic is always best
    • extra virgin olive oil - EVOO is healthier
    • fresh lemon - an acid to cut through and add freshness
    • grated parmesan - for a cheesy umami taste
    • toasted pine nuts - pricy but add a delicious soft, nutty flavor
    • salt - everything needs a bit of salt!

    How to Make Roasted Parmesan Broccoli

    Roasting Broccoli in the oven is an easy way to prepare broccoli. It holds it's shape and color well when compared to steaming or boiling broccoli. Plus no one likes soggy vegetables. Only takes minutes to prepare!

    1. Prepare Broccoli. Cut the broccoli into florets. Wash and Dry and place onto a lined baking tray. Slice the garlic and coat the broccoli with olive oil and salt.
    2. Roast. Preheat oven to 400°F/200°C. Roast in oven for 15 minutes until tips start to lightly brown.
    3. Toss. Squeeze the juice of ½ a lemon over your roasted broccoli. Toss with grated parmesan which will melt from the heat of the broccoli.
    4. Serve. Everyone will devour this recipe. Add extra parmesan cheese if needed.

    Air Fried Broccoli

    Air Fryers are so popular for a quick and easy way to roast vegetables. Hard to imagine how we lived without them sometimes!

    1. Prepare Broccoli. Cut the broccoli into florets. Wash and Dry and place into a bowl. Slice the garlic and coat the broccoli with olive oil and salt.
    2. Air Fryer. Preheat Air Fryer to 375°F/190°F. Place in Air Fryer basket and roast for 8-9 minutes until broccoli is tender and easily pierced with a fork.
    3. Toss. Squeeze the juice of ½ a lemon over your roasted broccoli. Toss through grated parmesan which will melt from the heat of the broccoli.
    4. Serve. Everyone will devour this recipe. Add extra parmesan cheese if needed.

    How to Roast Pine Nuts

    Don't skip this part of the recipe! Pine nuts add a soft, nutty flavor which contrasts the Parmesan cheese. Pine nuts always need to be quickly toasted, as they are usually sold in stores raw. You'll know the Pine Nuts are ready because they will be golden brown.

    1. Skillet Method. This is usually the quickest and easiest. Place Pine Nuts in a dry, oil free skillet. Cook over medium-low heat for about 2-3 minutes, constantly stirring until golden.
    2. Oven Method. Place pine nuts on a baking tray. Pre-heat oven to 400°F/200°C. Roast in the oven for about 5 minutes, until they are golden brown. Stir occasionally to ensure even roasting.

    Recipe Tips and Variations

    • Prepare in Advance. Wash, dry and toss broccoli florets in garlic and olive oil the day before. Keep refrigerated until you're ready to oven roast or Air Fry.
    • Spice it up! Shake some chili flakes when serving. If you're brave, toss through sliced chili peppers when roasting the broccoli
    • Herb it up! Toss through freshly chopped Basil for a tastier Italian twist

    • 2 heads Broccoli
