This is my ultimate comfort food - Chicken and Mushroom Pasta! Perfect for busy evenings, a weeknight dinner ready in around 30 minutes! It's so easy to make, and can be made as a one pot pasta skillet meal. Everyone loves washing less dishes.
What Type of Pasta for Chicken and Mushroom Pasta
I usually make this as a Fettuccine with a Cream Mushroom Sauce. Fettuccine means little ribbons in Italian. It's an egg pasta noodle, often made fresh or bought dried. Fresh pasta is always the tastiest, but I don't usually have the time to make fresh pasta. I even have the KitchenAid Pasta attachments. I wish I used them more often. You can use most pastas that you love in this recipe.

Chicken Breast or Chicken Thighs?
You can use either chicken breast or chicken thighs, its up to you and your diet. For a lower fat recipe, use chicken breasts. Be warned, the recipe will be drier than using chicken thighs. Chicken thighs are more flavorful, are juicier, but have more calories. Isn't that the case for everything that tastes good? Story of my life!
Lower Fat Chicken and Mushroom Pasta
To keep the fat content down, instead of using only whipping cream, I use a mixture of whipping cream, chicken stock and milk, thickened with a flour slurry. You won't miss the extra calories, and it tastes great. If you prefer the full cream version, you can also thicken the Chicken Mushroom Sauce by adding a cup of parmesan cheese instead of the flour slurry.
I love the flavor that mushrooms add to pasta dinner. This Chicken and Mushroom Pasta is a classic comfort food that my whole family loves, and I always make enough for leftovers for the next day.
How to Make Chicken and Mushroom Pasta
- Cook the pasta noodles
- In a skillet, caramelize the onions and mushrooms. Set aside
- Fry the chicken in same skillet, add garlic when the chicken is almost cooked for better flavor.
- Return the onions and garlic. Add cream, chicken stock and whipping cream. Simmer.
- Make the thickening slurry with flour and water - lump free! Mix into sauce and simmer to thicken.
- Toss the pasta through the sauce in the skillet. Season and garnish with parsley and parmesan
Recipe Tips
- Save 1 cup of pasta water from cooking the pasta. Use this water to make your powdered chicken stock. The starches in the pasta water add flavor and help thicken the sauce.
- Add some bacon to this recipe - Chicken, mushroom and bacon, do I need to say more?
- Toss in fresh spinach for extra vitamins. It wilts when heated, the kids probably won't even notice it
- Use whatever mushrooms you love! Portobello, Shitake, Button, any mushroom will work.
- Make it creamier by adding sour cream to the sauce - can never have too much sauce!

Ingredients
- 1 lb /500g pasta noodles
Chicken and Mushroom Sauce
- 2 tablespoons butter
- 2 tablespoons oil
- 1 onion diced
- 1 lb /500g mushrooms sliced
- 2 lbs /1kg chicken breast
- 3 cloves garlic
- 1 cup milk
- 1 cup chicken stock
- 1 cup whipping cream
Sauce Thickener
- 2 tablespoons flour
- ½ cup water
- ½ cup grated parmesan cheese
Seasoning and Garnish
- salt and pepper to taste
- garnish with freshly chopped parsley
Instructions
- Cook the pasta in salted water according to instructions. Drain and set aside.
Chicken and Mushroom Sauce
- In a skillet or pan, add 1 tablespoon butter and 1 tablespoon of oil, and fry the diced onion until it becomes translucent. Add the mushrooms and sauté until it's all caramelized. Set aside.
- In the same skillet, melt the remaining butter and oil and fry the chicken. Add the garlic to the chicken after about 5 minutes of frying the chicken. Fry the chicken until cooked.
- Return the caramelized onions and mushrooms to the skillet. Add milk, chicken stock and whipping cream. Heat to a simmer.
Sauce Thickener
- In a small glass, make a slurry with ½ cup water and the flour, mixing so there are no lumps. Add this flour slurry to the chicken and mushroom pasta sauce, allowing to simmer on low until it thickens (about 5 minutes). Optional (add ½ cup grated parmesan to the sauce)
Seasoning and Garnish
- Once pasta is ready, mix it into the skillet and toss to combine. Finish by adding salt and pepper to taste. Garnish with fresh chopped parsley and more parmesan.
