    Greek Green Beans

    These Greek Green Beans (fasolakia) are a tasty way to level up your side dish game! A mouthwatering, easy to make green bean recipe that screams Mediterranean cuisine. So hearty with the addition of tomatoes and potatoes, you can even enjoy it as a main meal!

    • Fresh Green Beans
    • Grated Tomatoes (or large can of Crushed Tomatoes)
    • Potatoes
    • Tomato Paste
    • Sugar
    • Extra Virgin Olive Oil
    • Onion and Garlic
    • Herbs - Fresh Parsley and Fresh Dill
    • Cinnamon Stick
    • Feta - for garnish

    How to Make Greek Green Beans

    1. Sauté - cook onions in olive oil over medium-high heat for 5 minutes. Add garlic and sauté for 1 minute.
    2. Add Vegetables - stir in grated tomatoes and tomato paste until evenly combined. Season with salt and pepper, and add sugar to balance acidity. Add green beans, potatoes, parsley, cinnamon stick and hot water.
    3. Braise - bring to a boil, cover with lid, reduce to simmer and cook for 30 minutes, stirring occasionally.
    4. Season and Adjust - stir in the dill, and cook uncovered for another 5 minutes. If sauce is too watery, simmer until it thickens. If too dry, add extra water. Sauce should be thick. Adjust seasoning if required.
    5. Serve and Garnish - sprinkle crumbled feta cheese and fresh dill. Can be served warm or at room temperature.

    Can I Use Frozen or Canned Beans?

    Highly recommend to use fresh beans for best flavor and texture when making Fasolakia. However you can substitute with frozen beans (thaw first) or canned.

    Can Greek Green Beans Be Made in Advance?

    Yes, they are the perfect side dish to make in advance (make the day before and refrigerate until ready). The flavors deepen, and it can be served warm or at room temperature.

    Storage and Re-heating

    • Fridge - place leftovers in an airtight container and keep refrigerated. Enjoy within 3 days
    • Freezer - not recommended for freezing, best enjoyed when freshly made
    • Re-heating - reheat stovetop until warm, or microwave for 1 minute, and then in 30 second increments until heated through

    Ingredients

    • 1½ pounds (750g) fresh green beans
    • 1½ pounds (750g) grated tomatoes or 28oz can crushed tomatoes
    • 3 medium potatoes, cut in half then thirds or 8 baby potatoes halved
    • 1 tablespoon tomato paste

    • 1 cup hot water
