    Garlic Butter Potatoes

    Garlic Butter Potatoes are a rustic way to enjoy new potatoes. A delicious side dish that's perfect for a cozy dinner or at a fancy dinner party. Everyone loves potatoes, especially when infused in garlic butter!

    Ingredients

    • Potatoes - baby potatoes or new potatoes are best
    • Salted Butter
    • Garlic - the more the merrier, potatoes love garlic
    • Salt - for seasoning (if needed)

    Instructions

    Tossed Garlic Butter Potatoes

    1. Prepare Potatoes - wash and peel baby potatoes. For larger potatoes cut into quarters.
    2. Boil Potatoes - cover the potatoes in salted water and boil for about 12-20 minutes. The size of the potato determines cooking times. Test with a fork, potatoes should be tender and pierce easily.
    3. Drain Potatoes - drain potatoes into a colander and return back into the saucepan.
    4. Melt and Toss - add butter, minced garlic and dill into the saucepan over the potatoes. Cover saucepan with lid and gently toss to coat the potatoes in garlic butter. Turn heat on medium if needed to melt butter.
    5. Season and Serve - season with salt and it's ready to serve.

    Rustic Butter Dipped Potatoes

    1. Wash Potatoes - peeling is optional. For larger potatoes cut into quarters
    2. Boil Potatoes - in a saucepan, cover the new potatoes in salted water and boil for about 12-20 minutes. The size of the potato determines cooking times. Test with a fork, potatoes should be tender and pierce easily.
    3. Prepare Ramekins - while potatoes are cooking, prepare 1 small ramekin per person. Mince one clove of garlic into each ramekin.
    4. Infuse Butter - melt butter in microwave or in a small saucepan. Pour melted butter into the ramekins.
    5. Drain and Serve - potatoes from water and enjoy the boiled new potatoes by generously dipping them into the garlic butter.

    Garlic Butter Potato Variations

    • Change the Herbs - instead of fresh dill, substitute with fresh basil, oregano, thyme or rosemary
    • Cheesy Potatoes - toss with grated Cheddar or Parmesan cheese for a gooey twist
    • Spicy Potatoes - add chili flakes or for extra spicy flavor, drizzle with Sriracha Sauce

    Recipe Tips and FAQs

    • Skip the Spoon - don't use spoon to mix, as it will crush potatoes. Instead cover with lid in warm saucepan, and shake butter and herbs together until fully coated
    • Uniform Potatoes - ensure the baby potatoes or chopped potatoes are the same size. This ensures even cooking.
    • Fresh Herbs - this provides the best flavor, however you can sprinkle dried herbs for a budget friendly version
    • Dip with Fork - use a fork to cut the new potato in half, and dip into the garlic butter. Be warned, garlic is strong in flavor, you will have garlic breath!

    Can I Prepare This in Advance?

    Yes. While freshly coated are the best way to enjoy these potatoes, they can be made in advance. Simply re-heat before serving.

    Can I Roast Garlic Butter Potatoes?

    Yes, after tossing them in garlic butter, place in a roasting pan and roast at 400°F (200°C).

    Storage

    Place leftovers in an airtight container and keep refrigerated. Enjoy within 5 days.
