Ingredients
1½pounds(750g) fresh green beans
1½pounds(750g) grated tomatoesor 28oz can crushed tomatoes
3medium potatoes, cut in half then thirdsor 8 baby potatoes halved
1tablespoontomato paste
½teaspoonsugar(to balance acidity)
¼cupExtra Virgin Greek Olive Oil
1smalloniondiced
4clovesgarlicminced
1cuphot water
⅓cupfresh parsleychopped
1wholecinnamon stick
3tablespoonsfresh dillchopped
½cup feta for garnishcrumbled
Instructions
Sauté - cook onions in olive oil over medium-high heat for 5 minutes. Add garlic and sauté for 1 minute.
Add Tomatoes - stir in grated tomatoes and tomato paste until evenly combined. Season with salt and pepper, and add sugar to balance acidity.
Add Vegetables - mix in green beans, potatoes, parsley, cinnamon stick and hot water.
Simmer - bring to a boil. Cover with lid, reduce to simmer and cook for 30 minutes, stirring occasionally.
Season and Adjust - stir in the dill, and cook uncovered for another 5 minutes. If sauce is too watery, simmer until it thickens. If too dry, add extra water. Sauce should be thick. Adjust seasoning if required.
Serve and Garnish - with crumbled feta cheese and fresh dill. Can be served warm or at room temperature.
