Greek Green Beans - Fasolakia

Ingredients

  • pounds (750g) fresh green beans
  • pounds (750g) grated tomatoes or 28oz can crushed tomatoes
  • 3 medium potatoes, cut in half then thirds or 8 baby potatoes halved
  • 1 tablespoon tomato paste
  • ½ teaspoon sugar (to balance acidity)
  • ¼ cup Extra Virgin Greek Olive Oil
  • 1 small onion diced
  • 4 cloves garlic minced
  • 1 cup hot water
  • cup fresh parsley chopped
  • 1 whole cinnamon stick
  • 3 tablespoons fresh dill chopped
  • ½ cup feta for garnish crumbled

Instructions

  • Sauté - cook onions in olive oil over medium-high heat for 5 minutes. Add garlic and sauté for 1 minute.
  • Add Tomatoes - stir in grated tomatoes and tomato paste until evenly combined. Season with salt and pepper, and add sugar to balance acidity.
  • Add Vegetables - mix in green beans, potatoes, parsley, cinnamon stick and hot water.
  • Simmer - bring to a boil. Cover with lid, reduce to simmer and cook for 30 minutes, stirring occasionally.
  • Season and Adjust - stir in the dill, and cook uncovered for another 5 minutes. If sauce is too watery, simmer until it thickens. If too dry, add extra water. Sauce should be thick. Adjust seasoning if required.
  • Serve and Garnish - with crumbled feta cheese and fresh dill. Can be served warm or at room temperature.
