    Sweet Chilli Chicken Drumsticks

    I think everyone loves eating chicken drumsticks, they're so easy to make for dinner! Sweet Chili Chicken Drumsticks is one of the tastiest chicken drumstick recipes I make. Sweet and a little spicy, infused with garlic and ginger, a tasty Asian dinner.

    Chicken Drumsticks Marinade

    There are so many ways to make a marinade for chicken drumsticks, and this is one of the easiest recipes I know. Full of flavor, this Sweet Chili Chicken Recipe is an easy Thai favorite. Each summer I make the Sweet Chilli Sauce at home from scratch. It's easy to make, but you can buy it at any Asian grocer or supermarket.

    You don't need to add any additional flavors to this marinade, other than soy sauce, juice of a lime and the Thai Sweet Chilli Sauce. That's it. The hard work has already been done when they made the sauce, with garlic, ginger and chili peppers. The soy sauce adds saltiness, and the lime gives the sour. Just throw it all into a Ziploc bag for an easy and mess free way to marinate the chicken.

    Oven Baked Chicken

    So many different ways to make chicken, not all of them healthy, from using Shake-n-Bake to battered and deep fried. This Sweet Chili Chicken recipe is much healthier, without any unpronounceable ingredients. Every summer, grill it on the barbecue. There is something tasty about a chargrilled chicken that has crispy burnt bits, so good. However, as it's winter here, I'm using my oven.

    Baking Chicken in the oven allows me to quickly make it, even on a day when I'm not working at home. So easy to throw it in a baking tray and continue to deal with the chaos of life.

    It's best to marinate the drumsticks a day before. The drumsticks can even be marinated in the Ziploc bag and thrown in the freezer. It takes no time at all to prepare, such an easy mid-week dinner recipe.

    Sweet Chilli Chicken Side Dishes

    There are so many things you can eat with this recipe, here are some of my recommendations. The Thai Cauliflower Rice is healthy and keeps with the dinner theme. However, I usually need carbs, so Garlic Mash and Broccoli are my other suggestions.

    Ingredients

    • 4 lbs /2kg chicken drumsticks, skin-on
    • 1 cup Thai Sweet Chilli sauce
    • ¼ cup soy sauce
    • 1 juice of a lime
    Prevent your screen from going dark

    Instructions

    • Place the drumsticks, sweet chili sauce and soy sauce into a Ziploc bag, and allow to marinate for at least 4 hours (overnight is best).
    • You can bbq on a grill, but I am baking in the oven. Preheat oven to 375°F/190°C. Line a baking tray with baking paper. Place marinated chicken pieces on the paper and bake for about 45 minutes, or until the chicken is cooked at 165°F (in the thickest part of the chicken when pierced). Baste with the Sweet Chili marinade while cooking.
    • Garnish with thinly sliced green onions or cilantro before serving.

    When chicken is cooked, before serving, add a final glaze of Sweet Chilli Sauce and broil for a few minutes to get a nice golden color.
