If you’ve never made a Cauliflower Rice recipe, you might be surprised that it’s made without rice. The rice is just a reference to the appearance of the grated cauliflower, and that it’s a good rice substitute.
I’ve been late to the Cauliflower Rice craze, as I tend to avoid gluten free, low carb, vegan foods. But since playing around with different Cauliflower Rice recipes, they’ve become staples on my dinner plate! The fish sauce doesn’t make it vegan or vegetarian, but a pescatarian recipe!
Is Cauliflower Rice good for you?
In one word, yes. Cauliflower is high in Vitamin C, Vitamin K and folate. It has anti-inflammatory properties, a source of fibre, and good for your heart. Any weight loss benefits would be from replacing the carbs on your plate with a healthy cauliflower rice. It fills you up like a carb.
Can you freeze Cauliflower Rice?
I find that this recipe is good for 4-6 people as a side dish. If that’s too much for your then throw it into a Ziplock bag and throw it into the freezer! Yes, it freezers wonderfully. Just warm it up again in a skillet until heated through.
Cauliflower on it’s own is quite bland in flavor, which means it takes on flavor additions well. There are many varieties of Cauliflower Rice and this Thai inspired recipe is meant to be easy, for life on the go. There are more complex Thai flavored Cauliflower Rice recipes out there. You can even add garlic prawns to eat with this!
If using a larger cauliflower, you can add more garlic and ginger, a rule of thumb is to keep the garlic and ginger 50/50. The sourness of the Thai Fish sauce is balanced by the sweetness of the palm sugar. If you like it spicy, just add some finely chopped chili peppers when frying the garlic and ginger. Add extra chopped cilantro before serving.
It’s great to drizzle Sweet Thai Chilli Sauce on this Cauliflower Rice recipe. You just need enough for flavor, not to drown the rice. No one likes a soggy Cauliflower Rice recipe!

Easy Thai Cauliflower Rice Recipe
Thai Cauliflower Rice recipe is a side dish packed with flavor, you won't miss the carbs on your plate! It's gluten free, low carb, paleo and pescatarian. But you'd never know it was any anything else but delicious!
- 1 medium cauliflower
- 2 cloves garlic minced
- ½ red bell pepper finely diced
- small knob ginger
- coconut oil for frying
- 1½ teaspoons grated palm sugar
- 1 teaspoon Thai fish sauce
- Garnish cilantro and red chili peppers
Cut cauliflower into quarters and grate using a cheese grater. Some people use a food processor.
Place coconut oil in a frying pan over high heat. Saute the garlic cloves, ginger and red bell pepper for about 2 minutes. Can add extra Thai Red Chilli if you want to add heat to this dish.
Add the cauliflower rice to the frying pan and cook for about 5-7 minutes, stirring constantly.
Add the Thai fish sauce and grated palm sugar, mix throughout and garnish with chopped cilantro.
