    Do you want to know the Secret to a Crispy Grilled Cheese Sandwich recipe? Everyone knows how to make ordinary grilled cheese sandwiches (grilled toasties). But how do you make them nice and crispy? Perfect for lunch or as an after school snack.

    This is the secret to making a crispy Grilled Cheese Sandwich recipe! I love the how easy it is make, and you don't need to spread hard butter! Who knew that mayo could make such a difference when makeing grilled toasties. You're gonna love this!

    Do You Need Butter For Grilled Cheese?

    I don't know about you, but I hate spreading the butter. If it's not soft enough, it can tear the bread, or not fully spread the outside of the bread. First world problems, I know! After reading this recipe, you will never use butter again for your Grilled Cheese Sandwich!

    My cousin Tatyanna shared a secret with me. It's so simple, that you would say, yes, I knew that, but it's not the default way of making grilled cheese, but it should be! The secret to making an easy crispy grilled cheese sandwich that's crispy on the outside is... mayo.

    Grilled Cheese Sandwich Recipe with Mayo

    Yup. I can't believe I never considered mayo instead of butter! So easy. Slather on some smooth mayonnaise on the outside of the bread, no butter required. Not all mayonnaise tastes the same. I love either Hellman's Mayo, Heinz Mayo, and even sometimes use Japanese Mayo. Either way, use your favorite mayo!

    So why use mayo? Well Mayo is mostly made with oil, easy spreading, and melts easily when heat is applied. It's the perfect recipe for frying pan grilled cheese sandwiches. I used a griddle pan, so I get the nice lines on the bread!

    What Bread is Best for Grilled Cheese Sandwiches?

    I like using sourdough bread, as pictured. It's a bit more dense than regular white bread, and it's nice a crispy. Most commonly, you can use plain regular white bread. Any sliced bread will do. For a different flavor, try a dark Rye bread. Imagine grilling a Reuben Sandwich on Rye with the mayo on the outside! YUM! I don't think Grilled Cheese works well with baguette bread, pita bread, focaccia breads, bagels and I find Brioche too sweet for me.

    Which Cheese is Best for Grilled Cheese Sandwiches?

    I usually make Grilled Cheese Sandwiches with slices of Cheddar Cheese. I especially like American Cheddar, the orange cheese slices found in the USA. Here in Australia, we don't dye our cheese orange, so all our cheddar is white. Maybe it's nostalgia from my childhood, but I love the orange coloured cheddar cheese! Don't get me started on my love of marble cheese. 🤣 I'm lucky Costco has opened up, and I get a steady supply of orange cheese!

    You want to use an easy melting cheese, and it's even tastier when mixing your cheese flavors together. Edam Cheese, Gouda, Swiss Cheese with Cheddar cheese. I'd avoid Blue Cheese and Cream Cheese!

    Sometimes I add ham and roasted peppers, but the possibilities are endless what you put inside. It doesn't have to be plain cheese. This Crispy Grilled Cheese Sandwich recipe can be stuffed with your favorite sandwich ingredients.

    Ingredients

    • 4 pieces of bread
    • 4 slices of cheddar cheese
    • mayonnaise

    Instructions

    • Preheat frying pan on medium heat.
    • Spread mayo on 2 pieces of bread. Place a slice of bread, mayo side down, on the frying pan.
    • Add 2 cheese slices and place the other bread slice, mayo side up on the sandwich. The mayo is spread on the outside of the sandwich.
    • Cook until lightly browned and crispy and flip over and grill until cheese is melted. Repeat with more sandwiches if needed.
