Peel and cut the sweet potatoes into small cubes. Place in a large pot and fill pot with enough water to cover potatoes. Cook the potatoes for about 20 minutes, or until they are tender.
Drain the sweet potatoes and place into a mixing bowl. Mash until you reach your desired consistency. Mix in the whipping cream, minced garlic and butter. Use an electric mixer to beat the potatoes until they are fluffy.
Season with salt and black pepper to taste, and garnish with fresh parsley.
