Imitation Crab Salad

Ingredients

  • 16 oz (500g) imitation crab meat crab sticks or crab flakes
  • 4 hard boiled eggs chopped
  • ½ small onion finely diced
  • 1 spring onion chopped
  • ¾ cup Russian Mayo see notes
  • fresh dill and red caviar for garnish
  • salt and pepper

Instructions

  • Make hard boiled eggs according to instructions, cool and peel. Set aside.
  • Place the crab meat in a bowl. (dice imitation crab sticks or use imitation crab flakes)
  • Slice the hard boiled eggs in half, then dice into pieces.
  • Add the finely diced onion and green onion.
  • Add sour cream mayonnaise and mix throughout. Salt and pepper to taste.
  • Garnish with red caviar and fresh dill. Best chilled before serving.

Notes

To make homemade Russian Sour Cream Mayo, mix together the following ingredients.
  • ½ cup sour cream
  • ¼ cup mayo (like Hellmans or Heinz)
  • ¼ teaspoon dry mustard powder (can substitute with Dijon mustard)
  • ¼ teaspoon vinegar
  • pinch of salt and white sugar
