A Sweet Chilli Chicken Marinade, perfect for a baked chicken drumstick dinner. Who needs Shake n Bake? Try this sticky, sweet and spicy, with authentic Thai flavors. Baked or grilled, an Asian favorite that’s incredibly easy to make for a weeknight dinner.
Place the drumsticks, sweet chili sauce and soy sauce into a Ziploc bag, and allow to marinate for at least 4 hours (overnight is best).
You can bbq on a grill, but I am baking in the oven. Preheat oven to 375°F/190°C. Line a baking tray with baking paper. Place marinated chicken pieces on the paper and bake for about 45 minutes, or until the chicken is cooked at 165°F (in the thickest part of the chicken when pierced). Baste with the Sweet Chili marinade while cooking.
Garnish with thinly sliced green onions or cilantro before serving.
When chicken is cooked, before serving, add a final glaze of Sweet Chilli Sauce and broil for a few minutes to get a nice golden color.
