Birds Nest Cookies

Easy, no bake Birds Nest Cookies are the perfect spring and Easter treat to make with your kids! Made with crispy Chow Mein noodles, chocolate chips, coconut and Cadbury Mini Eggs.

Ingredients

  • 12 oz / 400g chocolate chips
  • 6 oz / 200g Crispy Chow Mein noodles
  • ½ cup /50g shredded coconut
  • Cadbury Mini Eggs Cadbury Mini Eggs

Instructions

  • Bring a small saucepan of water to a boil. Remove from heat and place a metal bowl, filled with chocolate, firmly on top. Keep stirring until chocolate is completely melted, will take about 5 minutes.
  • Place the chow mein noodles and shredded coconut in a bowl. Add the melted chocolate and mix until coated.

Silicone Muffin Pan Method

  • Spray the muffin pan with non-stick spray. Spoon the mixture in the pan and lightly press to create a nest or well. Refrigerate for 30 minutes. Before serving, add the candied chocolate eggs into the nests.

Baking Tray Method

  • Line a baking tray with wax paper. Spoon 2 tablespoons to form to create a nest. Refrigerate for 30 minutes. Before serving, add the candied chocolate eggs into the nests.
