Chocolate Birds Nest Cookies

Fun to make, the perfect Easter treat to make with your kids. Birds Nest Cookies made with Chocolate, Chow Mein Noodles and Coconut and are a tasty springtime treat. Easy, no bake cookies, topped with candied chocolate eggs.

Ingredients

  • 12 oz / 400g chocolate chips
  • 6 oz / 200g Fried Chow Mein noodles
  • ½ cup shredded coconut
  • candy chocolate Easter eggs Cadbury Mini Eggs

Instructions

  • Bring a small saucepan of water to a boil. Remove from heat and place a metal bowl, filled with chocolate, firmly on top. Keep stirring until chocolate is completely melted, will take about 5 minutes.
  • Place the chow mein noodles and shredded coconut in a bowl. Add the melted chocolate and mix until coated.

Silicone Muffin Pan Method

  • Spray the muffin pan with non-stick spray. Spoon the mixture in the pan and lightly press to create a nest or well. Refrigerate for 30 minutes. Before serving, add the candied chocolate eggs into the nests.

Baking Tray Method

  • Line a baking tray with wax paper. Spoon 2 tablespoons to form to create a nest. Refrigerate for 30 minutes. Before serving, add the candied chocolate eggs into the nests.
