  • 1/2 cabbage shredded or sliced
  • 1 onion finely diced
  • 1 cup boiling water
  • 1/2 cup white vinegar
  • 1 teaspoon salt heaping teaspoon
  • 1 teaspoon sugar heaping teaspoon
  • 1 carrot, grated optional


  1. Thinly slice/shred the cabbage into strips and place into a bowl. Finely dice the onion and mix with cabbage.

  2. Add the vinegar, salt and sugar to the boiling water and pour over the cabbage mixture. Using your hands, mix and massage the brine through the cabbage for a minute. Allow to sit for at least 30 minutes, but best to be left overnight. Keep it refrigerated.
