Air Fryer Baked Potatoes
Heat Air Fryer to 400°F/200°C.
Stab potatoes with a fork a few times. Rub them with oil, and place in Air Fryer to cook for 45-60 minutes until fork tender. Cooking time varies based on potato size. Allow potatoes to cool.
Cut the potatoes in half lengthways. Scoop out the insides into a bowl, careful not to tear the shell. Leave a small potato wall about ¼ inch thick, leaving a shell.
Fry the sliced bacon until cooked. Drain on a paper towel.
Mix the baked potato flesh with sour cream, ½ the grated cheese, ½ the bacon, ½ green onions, cajun spice, salt and pepper.
Spoon the potato mixture back inside the potato skins. Return to Air Fryer for 3-4 minutes at 400°F/200°C. Top with remaining cheese and bacon and heat in Air Fryer for 1-2 minutes until cheese melts.
Carefully remove from the Air Fryer. Garnish with green onions and a dollop of sour cream.
