Preheat oven to 350°F/180°C.
Bake the potatoes for 1 hour. You can also microwave 4 potatoes for about 15 minutes. Be sure to stab them several times each with forks before placing in microwave. Set aside to cool.
In a frying pan, fry the bacon until cooked. Set aside.
Cut the potatoes in half lengthways. Scoop out the insides into a bowl, careful not to tear the shell. Leave a small potato wall about ¼ inch thick, leaving a shell.
Mix the potato flesh with bacon, sour cream, ½ of the grated cheese, ½ bacon, ½ green onions, cajun spice, salt and pepper.
Spoon the potato mixture back inside the potato skins. Top with remaining cheese and bacon.
Bake for another 15 minutes in oven at 350°F/180°C until heated through. Garnish with green onions before serving.
