Ingredients

  • 2 cups flour
  • ¼ cup sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • cups buttermilk
  • 2 eggs
  • ¼ cup melted butter
  • oil for frying butter or cooking spray

Instructions

  • In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  • In a separate bowl, whisk the buttermilk, eggs, and melted butter until well combined.
  • Pour the wet ingredients into the dry ingredients. Gently fold the mixture together until just combined. Be careful not to overmix, as it can lead to dense pancakes.
  • Preheat a non-stick skillet or griddle over medium heat. Lightly grease the surface with cooking spray, oil or butter.
  • Using a ¼ cup measuring cup, pour the batter onto the skillet, spreading it slightly with the back of the cup to form a round shape. Cook until bubbles form on the surface, about 2-3 minutes.
  • Flip the pancake and cook for an additional 1-2 minutes until golden brown. Repeat with the remaining batter.
  • Serve the buttermilk pancakes warm with your favorite toppings and enjoy!
