Pierogi Pizza

Pierogi Pizza is a delicious twist on the classic pizza we all love. Made with flavors of the iconic Eastern European dumpling Pierogi, topped with gooey mozzarella cheese. A Potato and Pizza carb marriage made in heaven with homemade pizza dough instructions.

Ingredients

  • fresh pizza dough
  • 4 large potatoes sliced thinly
  • 2 teaspoons cayenne pepper optional
  • 1 clove garlic minced
  • 1 teaspoon minced onion use a garlic press
  • salt and pepper to taste
  • 3 tablespoons sour cream
  • 2 cups mozzarella grated
  • 1 cup white cheddar grated
  • 12 oz (300 g) bacon chopped
  • 3 green onions chopped
  • serve with sour cream

Instructions

  • Make Pizza Dough as per directions in recipe post, or buy pizza dough (Making dough adds 1 hour to recipe time).
  • Preheat oven to 200°C/400°F.
  • Peel and slice potatoes. Place in a saucepan with garlic, onion and cayenne pepper. Fill with enough water just to cover the potatoes. Boil for about 10 minutes until potatoes are cooked, but not mushy. Drain the water from the potatoes and allow to cool on a plate.
  • Stretch pizza dough into desired shape. For this recipe, I used 2 rectangle baking sheets.
  • Spread a layer of sour cream on pizza dough. Lay potato slices over the pizza until entire pizza is covered. Season with salt and pepper.
  • Sprinkle mozzarella and cheddar over the potatoes and top with bacon.
  • Top pizza with chopped bacon over the grated cheese.
  • Bake in the oven on lower rack for 15-20 minutes until cheese is golden. Allow to cool for 5 minutes before cutting and serving.
  • Garnish with chopped green onions and serve with sour cream.
