Chipotle Guacamole

Chipotle guacamole is the perfect blend of creamy, smokey and spicy. Great as a snack, an appetizer, for game nights, or as a condiment for your favorite Mexican meals.

Ingredients

  • 2 ripe avocados
  • 1 Chipotle Pepper in Adobo Sauce finely diced
  • 1 tablespoon sour cream
  • ½ garlic clove minced
  • ½ teaspoon salt
  • 1 tablespoon fresh lime juice juice of ½ fresh lime
  • cup cilantro chopped

Instructions

  • Cut the avocados in half, remove the pit, and scoop out the flesh into a bowl.
  • Mash the avocado with a fork or a potato masher until it is mostly smooth with some chunks remaining. Add sour cream to assist the mashing.
  • Mix in the diced Chipotle peppers, minced garlic, salt, lime juice, and chopped cilantro.
  • Taste and adjust the seasoning as needed.
  • Serve immediately or cover with plastic wrap and refrigerate until ready to serve.

Notes

  • Triple the Recipe: If there are any leftovers, freeze them for an easy and healthy snack
  • Ripening Hack: avocados are easiest to mash. If avos are hard, cut in half and remove the seed. Cover in plastic wrap and microwave in 30 second increments until softness is achieved. Place in fridge to cool before mashing.
  • Substitute Chipotle Peppers in Adobo Sauce with Tabasco with Chipotle or Cholula Chipotle Hot Sauce
