How to Make Raclette

  • Raclette Grill or can use broiler

Ingredients

  • Raclette Cheese 7-9oz (200-250g) per person
  • small potatoes 2-3 per person
  • pickles (cornichons)
  • sliced onion
  • cured meats salami or prosciutto
  • raclette spices

Instructions

  • Boil whole potatoes until fork tender, set aside.
  • Thinly slice onions and vegetables, place pickles into bowls, slice potatoes, prepare meats, select spices (all placed table ready to go).
  • Slice cheese if buying a block of raclette cheese (it's more economical this way) slice 2mm thick (just slightly less than ⅛"). ¼" is too thick!
  • Grill cheese under raclette grill until it's bubbly. Grill vegetables and meats on top while cheese is melting.
  • Using the cheese scraper, slide the melted cheese over a slice of potato (and grilled vegetables or condiments)
  • Get creative and serve alongside condiments, under condiments, over the cheese, make it your own.
