Ingredients

  • 2 lbs (1kg) cherry tomatoes on the vine
  • 3 cloves garlic
  • fresh rosemary sprigs
  • extra virgin olive oil
  • salt and pepper
  • balsamic or wine vinegar (I used Chardonnay Vinegar)

Instructions

  • Pre-heat oven to 450°F/220°C.
  • Spread fresh rosemary in a shallow baking dish. Place cherry tomatoes and garlic on top.
  • Generously drizzle with olive oil, season with salt and pepper.
  • Roast for 15-20 minutes until tender. Drizzle with a splash of balsamic or wine vinegar before serving.
