2lbs(1kg) cherry tomatoeson the vine
3clovesgarlic
fresh rosemary sprigs
extra virgin olive oil
salt and pepper
balsamic or wine vinegar(I used Chardonnay Vinegar)
Instructions
Pre-heat oven to 450°F/220°C.
Spread fresh rosemary in a shallow baking dish. Place cherry tomatoes and garlic on top.
Generously drizzle with olive oil, season with salt and pepper.
Roast for 15-20 minutes until tender. Drizzle with a splash of balsamic or wine vinegar before serving.
