Sauté the onions and garlic in oil for about 10 minutes until they start to caramelize golden brown.
Reduce heat to medium. Add the balsamic vinegar, brown sugar, salt and pepper, thyme, and a bay leaf. Simmer for about 10 more minutes until it starts to thicken and further reduce. Remove from heat and cool in fridge before proceeding.
Mix the caramelized onions with the sour cream and mayo. Garnish with chopped chives before serving.
