This is the base of this Twice Baked Potatoes recipe, it all starts with the Air Fryer!
- Oil potatoes and cook them in the Air Fryer
- Slice and cook the bacon, set aside
- Cut potatoes in half and scoop out the insides into a bowl
- Mix in sour cream, bacon, cheese and seasonings
- Spoon back into the potato shells and cook in Air Fryer
- Garnish with bacon, cheese, green onions

Ingredients
- 4 medium potatoes
- 2 tablespoons oil
- 5 bacon rashers sliced
- ¼ cup sour cream
- ½ cup grated cheese
- ½ teaspoon Cajun spice
- salt and pepper to taste
- 1 green onion stalk chopped
Instructions
Air Fryer Baked Potatoes
- Heat Air Fryer to 400°F/200°C.
- Stab potatoes with a fork a few times. Rub them with oil, and place in Air Fryer to cook for 45-60 minutes until fork tender. Cooking time varies based on potato size. Allow potatoes to cool.
- Cut the potatoes in half lengthways. Scoop out the insides into a bowl, careful not to tear the shell. Leave a small potato wall about ¼ inch thick, leaving a shell.
- Fry the sliced bacon until cooked. Drain on a paper towel.
- Mix the baked potato flesh with sour cream, ½ the grated cheese, ½ the bacon, ½ green onions, cajun spice, salt and pepper.
- Spoon the potato mixture back inside the potato skins. Return to Air Fryer for 3-4 minutes at 400°F/200°C. Top with remaining cheese and bacon and heat in Air Fryer for 1-2 minutes until cheese melts.
- Carefully remove from the Air Fryer. Garnish with green onions and a dollop of sour cream.
Oven Baked Instructions
- Preheat oven to 400°F/200°C. Rub the potatoes with oil and Bake for 45-60 minutes until they are fork tender.
- Set aside to cool, and follow the instructions above.
Microwave Instructions
