Turkey Wonton Soup is a delicious way to eat leaner and healthier, and a fantastic way to use up your leftover turkey broth from Christmas or Thanksgiving. Of course, you can use chicken stock as well!
This is always my starting point when I'm making Turkey Wonton Soup. I love the easy way to make Turkey broth, either the traditional stovetop way, or using an Instant Pot. It seems like such a waste not to use the turkey leftover to make a delicious bone broth! It seems like the classic default turkey broth recipe is Leftover Turkey Soup. However, I think a Turkey Wonton Soup is much more fun to make (and eat).
If you make the soup base in advance, this recipe only takes about an hour to make. After the holidays, I'm turkey'd out, but till make soup broth. I freeze and defrost it when I'm ready to make 'real soup'. Otherwise use store store bought stock. Usually I double the wonton recipe, and freeze half of the dumplings on a tray before putting them into a Ziploc bag. It's an quick and easy meal for another night!
Different ways of folding wontons seems to be all the rage. You can fold the filled wonton wrappers anyway you like, as long as the filling doesn't fall out when cooking. I like to make them like traditional Russian Pelmeni dumplings by folding them diagonally, holding at top of the triangle then working my way up from the bottom corners to the top, to seal the wonton. Then it's easy to pinch the 2 bottom corners together to complete the dumpling. It's probably easier to see how it's done on the photo.
I usually buy the wonton wrappers, as it's quick and convenient. However you can make your own homemade Wonton Wrappers from the Belgian Foodie. This soup tastes even better when it's entirely homemade, from the broth right through to the wonton wrappers.
- Use store bought Chicken Stock and ground chicken to make Chicken Wonton Soup
- Freeze leftover turkey stock and defrost for later use
- Freeze the wontons on a tray, then place them in a Ziploc bag to make a quick wonton soup dinner another day
- Recipe calls for raw shrimp, but if you only have cooked shrimp, you can use that. Raw shrimp will taste better.
Turkey Wonton Soup is a delicious Chinese dumpling soup. You can add noodles to the soup with the fresh wontons, but I think people do that when they use less wontons as the noodles are a filler. Don't do that, the Turkey Wontons are the best part! Bon Appetit! Приятного аппетита!
Ground Turkey Wontons
- ¼ lb /250g ground turkey or chicken
- ¼ lb /200g raw shrimp peeled, deveined and each one chopped into 4-6 pieces
- 1 egg
- 1 tablespoon Shaoxing wine Chinese Cooking Wine
- 2 tablespoons soy sauce
- 2 cloves garlic minced
- 1 tablespoon ginger finely grated
- 1-2 green onions finely diced
- 1 tablespoon sesame oil
- 30 wonton wrappers approx.
Turkey Wonton Broth
- 96 oz turkey stock 3 litres
- 3 tablespoon soy sauce
- 1 tablespoon sesame oil
- 1 tablespoon Shaoxing wine
- 1 teaspoon of ginger finely grated
- 1 garlic clove minced
- salt if required
- garnish with 4 green onions sliced thinly on the diagonal
- Bring the turkey stock, 3 tablespoons soy sauce, 1 teaspoon sesame oil, 1 tablespoon Shaoxing wine, 1 teaspoon grated ginger and 1 minced garlic clove to a boil and allow to simmer for about 20-30 minutes over low heat. This will give you time to prepare the wontons.
- Place all the ground turkey, chopped shrimp, 1 tablespoon Shaoxing, 2 tablespoons soy sauce, cloves minced garlic, 1 tablespoon finely grated ginger, 1-2 finely diced green onions and ½ teaspoon sesame oil into a bowl and mix together until evenly combined.
- Put some water in a small bowl or glass. Using a wet finger, wet the edges around the wonton wrapper to ensure the wonton will stick and seal together when you pinch it.
- Place the wonton wrapper in the palm of your hand. Put a teaspoon of the meat mixture in the middle of the wrapper. Bring 2 opposite corners together, making a triangle. Holding the top to the triangle with one hand, pinch together the gaps to completely seal the wonton. Firmly press the edges. Bring the bottom corners together, press together to seal.
- Optional: you can add 1 cup of shredded bok choy to the soup and cook for 2 minutes.
- Gently add the wontons to the simmering soup. Bring soup to a boil and cook the wontons for about 5 minutes, or until they're cooked and float to the top. Serve immediately and garnish with the sliced green onions
