We went on an exciting truffle hunt at Millgrove Truffles, where we were shown how to make Truffle Grilled Cheese. Truffles are like edible underground mushrooms with a strong flavor and unique aroma, and are considered a delicacy.
The Black Perigold Truffle is what we went searching for, traditionally grown in the south of France. Trained dogs seek the truffle aroma, and let you know where to dig, usually a few centimetres underground. Dig carefully so you don't damage the valuable truffle!

How to Make Truffle Grilled Cheese
- Prepare Bread - spread butter evenly on one side of each bread slice.
- Build Sandwich - place slice of Gruyere on the unbuttered slice of bread. Slice or grate the truffles over the cheese slice. Spoon on the parmesan over the truffle. Cover with the slice of cheddar cheese. If using truffle oil, drizzle a tablespoon over shredded cheese.
- Fry - heat a frying pan and place the sandwiches (buttered side facing out) on the pan, or on a bbq flattop grill. Grill over medium heat for 3 to 4 minutes per side until golden and the cheese has melted.
- Serve - cut on the diagonal and serve while hot.

- Change the Bread - try your favorite bread like sourdough, rye bread, marble rye, whole wheat, Turkish bread...
- Be Generous - don't skimp on the cheese, can there ever be too much cheese? Mix and match your favorite cheeses for better flavor.
- Jar Truffles - not everyone can find real truffles, substitute with small black truffles in jars or with truffle paste
- Airtight Container - if storing fresh truffles, make sure you store it in a glass airtight container. If you don't, the flavor will penetrate food in the fridge. Even the milk will taste like truffles!

How To Store Fresh Truffles
Use truffles as fast as you can, as they last only 10 days from harvest. Loosely wrap truffle in a paper towel and place in an airtight glass jar in the fridge. Change the paper towel daily and keep truffle as dry as possible.
Can you Freeze Truffles?
Yes, truffles can be frozen. Place dry truffles into a Ziploc bag and squeeze air out. Can last up to 4-5 months. The flavor won't be as strong with frozen truffles.
What Do Truffles Taste Like?
Every truffle is different and has a unique flavor profile. For me they are earthy, musky and tasted surprisingly nutty for me. It does not taste like a mushroom! They can be fruity, spicy, earthy, nutty, with vegetal/herbal flavor notes.
Best Cheese for Truffle Grilled Cheese
Start with your favorite cheeses, definitely recommend using more than one type. Sharp cheeses work particularly well, but try not to use cheese infused with flavors that take away from the truffle flavors ie. smoked cheese.

- Grater - carefully grate truffle on a fine grater
- Thinly sliced - using a knife and a cutting board
