Candy coated chocolates are a key ingredient in Oatmeal Monster Cookies. Usually, they are made with classic chocolate M&M's. You could use flavored M&Ms like Peanut, Caramel or Crispy M&Ms. However, I prefer using Smarties because I like the candy coated flavor better.

There are many different types of oatmeals in supermarkets, how do you know which one to use? Rolled Oats are the most versatile oat which I recommend for this cookie recipe. This is the oat used in cookies, muffins, breads and more because they retain their texture when baked. They are also called Old Fashioned Oats.

- 7 Eggs - you read that right, this is a large batch cookie recipe
- 1 ½ cups Brown Sugar
- 3 ½ cups White Sugar
- 1 ½ cups Margarine
- 2 cups Peanut Butter
- 4 cups Flour
- 5 cups Rolled Oats
- 2 cups Chocolate Chips
- 2 cups Smarties
- Vanilla, Baking Powder and Corn Syrup
How to Make Oatmeal Monster Cookies
- Preheat oven to 350°F/175°C. Prepare baking sheets.
- Using a mixer, combine eggs, brown sugar, white sugar, vanilla, margarine, peanut butter, corn syrup until whipped evenly.
- Slowly add the baking soda and flour, mixing with a wooden spoon. Mix in the oats.
- Add the chocolate chips and Smarties.
- Drop a large scoop (about 3 tablespoons) of cookie dough onto the baking sheet and bake for 10-12 minutes.
- Allow cookies to set for 5 minutes before removing them onto a cooling rack.

- Chocolate Flavors - substitute chocolate chips with white, toffee or butterscotch chocolate chips

- Make it colourful - After placing scoop of monster cookie dough onto the baking sheet, position the Smarties on top of the cookies to make it more colorful.

How to Make Chewy Cookies
Allow your oatmeal cookie dough to rest in the fridge for about an hour before baking. Increasing corn syrup in your recipe also helps retain moisture in your cookies. Add a quarter cup for this recipe and see how you like it. Brown sugar also keeps cookies moist and soft.

These look fantastic. Funny but I've never made monster cookies. Perhaps it's time to finally make some, I'm sure my boys would be thrilled with that! I almost always freeze cookies after I bake. It's nice to have a stash in the freezer for cookie "emergencies".
