    Honey Roasted Carrots with Soy Sauce are tender, sweet and savory. A delicious and easy side dish with an Asian twist. Perfect for Thanksgiving, Christmas, or any weeknight dinner!

    There are so many different methods and variations how to enjoy Roasted Carrots, a popular dinner side dish. You can never have too many easy side dish recipes, this will become part of your regular dinner rotation.

    Ingredients You'll Need

    • Carrots - use whole carrots or rainbow carrots
    • Oil - use a neutral oil like vegetable, canola or sunflower oil
    • Honey - adds a natural sweetness and flavor
    • Soy Sauce - light soy or regular soy sauce
    • Salt - add a pinch for seasoning

    Carrot Preparation

    Carrots are so popular, and there are so many ways to prepare them. As photographed, I used whole baby carrots, but you have carrot preparation options.

    • Young Carrots with stems - smaller and quicker to roast, also look great on a plate
    • Whole Carrots - classic carrots found in every refrigerator
    • Sliced Carrots - slice them in half, lengthways so they cook faster
    • Baby Carrots - small, bite size, found in Costco or supermarkets
    • Quartered Carrots - regular carrots, quartered and cut down to size

    How to Make Honey Roasted Carrots

    Oven roasting time depends on the thickness of the carrots. Use carrots that are all the same size so they roast evenly. They are ready when they are a bit crisp and fork tender.

    1. Prepare - Peel the carrots, slice thick carrots in half lengthways.
    2. Toss - Toss the carrots in the honey soy mixture to coat.
    3. Roast - Place in pre-heated oven and bake for at least 25 minutes.

    Sliced Roasted Carrots

    Slicing your carrots into smaller pieces ensures a quicker cooking time, but still ensures that nice oven roasted flavor.

    1. Prepare - Peel the carrots, and slice them diagonally into 2" pieces.
    2. Toss - Toss the carrots in the honey soy mixture to coat.
    3. Roast - Place in pre-heated oven and bake for at least 15-20 minutes.

    Boiled Carrots with Honey Glaze

    The carrots that I grew up with! Boiling carrots is easy and is still full of flavor. The benefit to boiling carrots is how fast they cook, ready in 5 minutes!

    1. Prepare - Bring saucepan of water to a boil. Peel and slice carrots into ¼" pieces (diagonally).
    2. Cook - Add to boiling water and cook for 5 minutes, until tender.
    3. Toss - mix carrots with honey soy mixture (substitute oil with butter for richer flavor)

    Air Fryer Roasted Carrots

    Not everyone has an oven, and using an Air Fryer is a time saver, which also frees up your oven for cooking the main meal.

    1. Prepare - Preheat air fryer to 360°F/180°C. Cut carrots into quarters (lengthwise).
    2. Toss - Toss in honey soy mixture until coated.
    3. Roast - bake for 10 minutes in air fryer until they are tender.

    Honey Roasted Carrots Variations

    • Ginger - add a teaspoon of grated ginger to your honey soy mixture
    • Garlic - a great addition to compliment the honey soy
    • Butter - substitute melted butter instead of oil for a richer flavor
    • Skip the Soy Sauce - a honey butter glaze tastes amazing, garnish with fresh thyme, rosemary or fresh dill before serving
    • Maple Syrup - switch out with honey for a unique flavor
    • Sesame Seeds - a great way to garnish your carrots when serving

    PRO TIP: Save the leftover Soy Honey Glaze to glaze over the carrots just before serving.

    What to Serve with Honey Roasted Carrots

    • Crispy Grilled Chicken Wings - skewered and grilled, perfect with Asian flavored vegetables or Grilled Zucchini

    Carrots are naturally sweet, and roasting them makes them even more flavorful. Honey enhances the sweetness, balanced out with of soy sauce.     Ingredients

    • 1 lb (500g) carrots
    • 2 tablespoons oil
    • 2 tablespoons honey
    • 2 tablespoons soy
    • salt to taste

    Instructions

    • Preheat oven to 400°F/200°C. Line a baking pan with parchment paper.
    • Peel and trim the carrots leaves. If carrots are thick, cut in half to speed up the cooking time.
    • In a bowl, mix together oil, honey, soy, salt. Toss the carrots in the honey soy mixture to coat them.
    • Bake in oven for 25 to 35 minutes until they are tender. Roasting time depends on the thickness of the carrots. Remove and serve immediately.
