    What are Lemonade Scones?

    Lemonade Scones are an Australian scones recipe that's perfect to make for Afternoon Tea, brunch or as a snack with with a cup of tea. Light and fluffy, and not super sweet (even though you add fizzy lemonade).

    Do Not Use American Lemonade

    There are no lemons in this recipe! Australians call all fizzy lemon-lime soft drinks like 7-Up or Sprite as Lemonade. It's not fresh squeezed lemon juice, commonly known as American Lemonade. Use any clear, lemon-lime soda (like 7-UP) when making homemade scones!

    Ingredients You'll Need

    This recipe is known as easy scones for a reason, because all you need is these 3 ingredients!

    • Self Rising Flour (easy to make, just add baking powder)
    • Lemonade (7-Up or Sprite)
    • Whipping Cream - or heavy cream

    How to Make Self Raising Flour

    Self raising flour is very commonly used in Australia, UK, and even in the southern states of the US. Any supermarket in Australia sells this type of flour. If you can't find self raising flour, you can easily make your own. Mix these ingredients together, it's that easy to make self raising flour!

    • 1 cup all purpose flour
    • 1½ teaspoons baking powder

    How to make Lemonade Scones

    The easy part of this lemonade scones recipe is that it only needs 3 ingredients. Self raising flour, whipping cream and Sprite or 7up, how easy it that? You just place the ingredients into a bowl and mix to combine. The dough should be soft and tacky.

    • Prepare - mix all the ingredients together in a bowl, lightly. Carefully mixing until they are combined. The dough will be soft and tacky.
    • Roll - on a lightly floured surface, roll out the dough to about 1" thick.
    • Cut - using a 2" round cookie cutter, cut about 8 round pieces.
    • Set - place scones on a lightly greased sheet or on baking paper. (Optional: brush scones lightly with milk.)
    • Bake - place in for 15 minutes, until they're golden brown. Allow to cool on a wire rack.

    Recipe Tips and FAQs

    • Go Easy on the Dough - don't over mix the dough resulting in hard and tough scones. Try to handle the dough as little as possible.
    • Be Gentle - the dough is delicate. Gently pat the dough when cutting the round scone circles to keep the shape, super soft dough.
    • Full Fat Cream - don't use light whipping cream, the recipe needs the full fat whipping cream
    • Too Sticky? if your dough is too sticky, add a bit of extra flour. The dough should be soft and tacky, but not sticky
    • Brush with Milk - for a nicer looking scone, lightly brush with milk before baking
    • Make it Lemony - substitute clear lemon-lime soda with a fizzy lemonade drink, like Minute Maid (Lemon Squash in Australia)

    How to Serve Lemonade Scones

    • Traditional - served with clotted cream and strawberry jam (but fresh whipped cream works as well)
    • Warm or Cold - lightly warmed scones taste amazing, but they are also served cold
    • Change the Jams - serve with your favorite jams like blackberry, raspberry, or blueberry
    • Creamy Curds - elevate your scones by serving with homemade Passionfruit Curd or Lemon Curd

    Storage and Reheating

    • Fridge - place in airtight container and enjoy within a few day
    • Freezer - place in a Ziploc bag, squeeze out the excess air and keep frozen for up to 3 months
    • Reheating - place in microwave for 20-30 seconds until warm

    • 3 cups self raising flour*
    • 1 cup whipping cream not light

      I have to make 120 for an early morning event. Would preparing the dough the night before and putting it in the fridge before cutting still work?

        Hi Hayley, I haven't tried that before, but my sister said it works. My suggestion is to make a single batch and try it, as 120 is lots, and you'd want to get that right. Please let me know how it went 🙂

      I was really excited to try this recipe as it looks super simple. Mixed the ingredients and the dough is beyond "tacky" and pretty impossible to work with. It's so sticky that rolling it out was not an option. What have I done wrong?

        Hi Kate, if it’s too tacky, just add a bit of flour until it’s workable. Too dry then add bit more 7up! Europeans like to measure recipes by weight so it’s more exact. When we measure in cups, the flour can be more or less depending if you packed it tight or just sifted it with air. Adjust as needed. Hope that helps and good luck!

        Thanks Ronit, its so easy to use. I always figured that 7up was the 'healthiest' soft drink out there, but thats not really true. Still lots of sugar in it, but the scones aren't super sweet at all! 🙂 Let me know how it goes!
