    Chicken Alfredo Linguine

    Chicken Alfredo Linguine is a delicious comfort food combining pasta with a rich, creamy sauce tossed with chicken. Easy to make, perfect as a cozy midweek dinner (with enough for leftovers), a family gathering or an indulgent weekend dinner feast.

    Ingredients

    • Linguine Noodles - or can use Fettuccine Noodles
    • Butter and Olive Oil
    • Onion and Garlic
    • Chicken Breast
    • Heavy Cream (Whipping Cream)
    • Parmesan Cheese
    • a Lemon - for juice and zest
    • Salt and Pepper
    • Garnish - freshly chopped Parsley

    Equipment

    • Large Pot for cooking Linguine
    • Heatproof Measuring Cup to reserve Pasta Water
    • Colander to drain Linguine
    • Large Skillet or Frying Pan
    • Zester for Lemon

    How to Make Chicken Alfredo Linguine

    1. Cook Linguine - fill a large pot with water and cook Linguine Noodles according to instructions. Pasta should be cooked al dente. Save 1½ cups of Pasta Water before draining. Rinse noodles and set aside.
    2. Sauté - place 4 tablespoons of Butter in a frying pan. Over medium heat, sauté Onions until lightly golden. Stir in Garlic and cook for 1 minute. Set aside.
    3. Prepare Chicken - slice ChIcken Breast into thin strips. Add 3 tablespoons of Olive Oil into a frying pan and fry Chicken until cooked.
    4. Make Sauce - add Sautéed Onions back to frying pan with Chicken. Stir in Heavy Cream, Parmesan Cheese, Lemon Juice, and Lemon Zest. Simmer for 2-3 minutes for flavors to comine.
    5. Add Pasta - gently toss cooked Linguine until coated in the creamy sauce.
    6. Adjust Sauce - slowly pour reserved Pasta Water until desired consistency is reached. Season with Salt and Pepper to taste.
    7. Garnish - sprinkle fresh chopped Parsley and serve with extra Parmesan.

    Chicken Alfredo Linguine Variations

    • Vegetarian Alfredo - substitute Chicken with Mushrooms, Broccoli or Spinach
    • Zucchini Noodles - make it gluten free and healthy by mixing through Zucchini Noodles
    • Spicy - saute a chopped Chili Pepper with the onions for a spicy kick, or serve with Chili Pepper Flakes
    • Seafood - substitute Chicken with Shrimp or Scallops
    • Beef Alfredo - grill steak and slice into strips. Toss through pasta, bonus points for adding Blue Cheese for a stronger flavor

    Recipe Tips and FAQs

    • Add Vegetables - fry Frozen Peas or Mushrooms while frying the caramelized onions, or toss Spinach or Sun-Dried Tomatoes when tossing Linguine
    • Add Cream Cheese - adds extra creaminess and thickens the sauce too! Beware, also adds more calories 🤣
    • Chicken Stock Powder - sprinkle a teaspoon of chicken stock into the cream sauce for extra flavor
    • Al Dente Pasta - make sure not to overcook the pasta noodles. Suggest to cook for 1 minute less than suggested on the packet to get it perfect
    • Different Cheeses - try Parmesan Reggiano, Grana Padano, Pecorino, Gruyere or Fontina

    Can I Make This Recipe Lower in Calories?

    Yes. Substitute with lower fat alternatives. Additionally reduce the amount of Parmesan Cheese.

    • use Half and Half instead of Heavy Cream
    • mix 1 cup Milk with 1 cup Heavy Cream to reduce fat content
    • mix 1 cup of Chicken Stock with 1 cup of Milk - thicken with a cornstarch slurry
    • use a Light Cream or Coconut Milk

    Storage and Reheating

    • Fridge - place in airtight container and keep refrigerated. Enjoy within 3 days.
    • Freezer - not recommended for freezing as sauce separates when thawing.
    • Reheating - place in skillet over low heat. Add a splash of milk to help loosen noodles and sauce.
