    Easy Thai Cauliflower Rice

    If you've never made a Cauliflower Rice recipe, you might be surprised that it's made without rice. The rice is just a reference to the appearance of the grated cauliflower, and that cauliflower is a good rice substitute.

    I've been late to the Cauliflower Rice craze, as I tend to avoid gluten free, low carb, vegan foods. But since playing around with different Cauliflower Rice recipes, they've become staples on my dinner plate! The fish sauce doesn't make it vegan or vegetarian, but a pescatarian recipe!

    Is Cauliflower Rice good for you?

    In one word, yes. Cauliflower is high in Vitamin C, Vitamin K and folate. It has anti-inflammatory properties, a source of fibre, and good for your heart. Any weight loss benefits would be from replacing the carbs on your plate with a healthy cauliflower rice. It fills you up like a carb.

    Can you freeze Cauliflower Rice?

    I find that this recipe is good for 4-6 people as a side dish. If that's too much for your then throw it into a Ziplock bag and throw it into the freezer! Yes, it freezers wonderfully. Just warm it up again in a skillet until heated through.

    How to Prepare Cauliflower

    Grating Cauliflower - This is the method that I usually use. Remove the outer leaves of the cauliflower, break apart into smaller pieces and grate. The cauliflower will fall apart, and this does get quite messy. However, I find it's easy to clean, and I dont need to clean any electrical appliances

    Food Processor - This is the easiest way to make Cauliflower Rice, throw it in and blitz away. Usually a food processor can't take a whole cauliflower, so cut the cauliflower into quarters and blend away. Blitz for about 30 seconds until it resembles the texture of rice.

    How to Cook Cauliflower Rice

    There are a few different ways to cook Cauliflower Rice. This Thai Cauliflower Rice method is sautéed or stir fried. Quick and easy, you can add veggies and it's a side dish or meal ready to go.

    You can also microwave grated cauliflower. Place in the microwave for about 3 minutes on high, don't forget to stir halfway through. This is the healthiest way, with the lowest amount of fat, and is a great base for a rice substitute for curries or even stir frys.

    Roasting Cauliflower rice is also a thing. Drizzle with olive oil, throw in a few extra veggies and roast for about 10-12 minutes at 400°F/200°C. Quick and easy.

    How to Make Thai Cauliflower Rice

    Cauliflower on it's own is quite bland in flavor, which means it takes on flavor additions well. The sourness of the Thai Fish sauce is balanced by the sweetness of the palm sugar. There are many varieties of Cauliflower Rice and this Thai inspired recipe is meant to be easy, for life on the go.

    • Cut cauliflower into quarters and grate or process into rice.
    • Place coconut oil in a frying pan over high heat. Saute the garlic cloves, ginger and red bell pepper for about 2 minutes.
    • Add the cauliflower rice to the frying pan and cook for about 5-7 minutes, stirring constantly.
    • Add the Thai fish sauce and grated palm sugar, mix throughout and garnish with chopped cilantro.

    Recipe Tips

    • Add Garlic Prawns to this easy Pescatarian recipe
    • Don't be scared of adding extra ginger and garlic. The cauliflower can take it!
    • To make this spicy, add some chopped chili peppers when frying the garlic and ginger
    • Sauté extra veggies. Slice some Bok Choy, Snow Peas or sliced Green Onions
    • Fresh lemongrass adds a lovely citrus flavor
    • If you don't have palm sugar, substitute with brown sugar
    • Alongside the cilantro, add some fresh basil
    • Drizzle with Sweet Thai Chili Sauce when serving.

    Ingredients

    • 1 medium cauliflower
    • 2 cloves garlic minced
    • ½ red bell pepper finely diced
    • small knob ginger
    • coconut oil for frying
    • 1½ teaspoons grated palm sugar
    • 1 teaspoon Thai fish sauce
    • Garnish cilantro and red chili peppers

    Instructions

    • Cut cauliflower into quarters and grate using a cheese grater. Some people use a food processor.
    • Place coconut oil in a frying pan over high heat. Saute the garlic cloves, ginger and red bell pepper for about 2 minutes. Can add extra Thai Red Chilli if you want to add heat to this dish.
    • Add the cauliflower rice to the frying pan and cook for about 5-7 minutes, stirring constantly.
    • Add the Thai fish sauce and grated palm sugar, mix throughout and garnish with chopped cilantro.
