Birds Nest Cookies are a tasty treat to make in the spring, but most commonly at Easter. An easy Easter dessert that's kid friendly and adults will love to eat! It's a recipe that my wife makes that she remembers from her childhood.
What are Birds Nest Cookies?
These are not the Chinese Birds Nest delicacies made from bird saliva. Yes, that's a Chinese specialty. However, these chocolate Birds Nests are made by using fried Chow Mein Noodles that you buy in grocery stores. They are the crispy noodles, not the soft noodles that need cooking. The name comes from the shape of the treats, that are shaped like small chocolate birds nests. A tasty no-bake Easter treat.
Can I microwave the chocolate?
Officially, yes. There are many people who are successful at melting chocolate in the microwave. It sounds so easy! But I can't do it for the life of me. I have wasted many pounds of chocolates trying over the years, that I have given up. If you want to microwave the chocolate to melt it, here are the steps. Microwave the chocolate on 50% power for 1 minute. Mix and keep repeating until chocolate melts. Don't overheat in the microwave, or get any water in it. So, somewhere in those easy instructions, it always goes wrong for me.
What works for me? The double boiler method. I use a stainless steel bowl over a boiling saucepan of water. It takes about 5 minutes, and is still important not to overheat the chocolate. When the water boils, I take it off the heat and stir until it melts. We aren't always a patient bunch, but don't forget keep stirring while it's on the boil!
Birds Nest Cookies Idea Variations
There are a few different ways to make this Easter treat. I love adding a bit of shredded coconut to the noodle and chocolate mixture. You can add whatever looks a bit "sticky" that would look like sticks in a nest. Some people use pretzel sticks as the most commonly used substitute for noodles. I've seen them with shredded wheat, corn flakes, and even with added peanut butter. Sometimes they are called Haystack Cookies.
To get really creative, use different flavors of chocolate chips. Butterscotch or Caramel chocolate chips are popular. Personally I think that peppermint chocolate chips would be tasty, but really hard to find in Australia. If money is no option, make them with Ruby Chocolate chips. But please don't microwave the Ruby chips to make them melt. I think it would be cool to have pink Easter Nests, White Nests and Caramel Nests from different chocolates. Such fun!

Chocolate Birds Nest Cookies
Ingredients
- 12 oz / 400g chocolate chips
- 6 oz / 200g Fried Chow Mein noodles
- ½ cup shredded coconut
- candy chocolate Easter eggs Cadbury Mini Eggs
Instructions
- Bring a small saucepan of water to a boil. Remove from heat and place a metal bowl, filled with chocolate, firmly on top. Keep stirring until chocolate is completely melted, will take about 5 minutes.
- Place the chow mein noodles and shredded coconut in a bowl. Add the melted chocolate and mix until coated.
Silicone Muffin Pan Method
- Spray the muffin pan with non-stick spray. Spoon the mixture in the pan and lightly press to create a nest or well. Refrigerate for 30 minutes. Before serving, add the candied chocolate eggs into the nests.
Baking Tray Method
- Line a baking tray with wax paper. Spoon 2 tablespoons to form to create a nest. Refrigerate for 30 minutes. Before serving, add the candied chocolate eggs into the nests.
