There are so many different variations on how to enjoy Roasted Carrots, a side dish dinner favorite. We tend to eat a lot of meat and vegetables for dinner, and you can never have too many easy side dish recipes. And Honey Soy is a perfect accompaniment for Roast Carrots.
How to Make Honey Roasted Carrots
Carrots are naturally sweet, and roasting them makes them even more flavorful. Honey enhances the sweetness, balanced out with the addition of soy sauce.
This recipe is so easy to make. Simply mix together the honey soy glaze, toss the peeled carrots and roast for about 30 minutes. The size of your carrots will determine how long they need to be roasted. For this Honey Roasted Carrot recipe, I used small baby carrots with the stems still attached. Try to use carrots that are all the same size so they roast evenly. Sometimes I will cut the larger carrots in half to make them ‘thinner’.
I save the leftover Soy Honey Glaze to baste the carrots just before serving. The hardest part of this recipe is peeling the carrots!
Honey Roasted Carrots Without Vinegar
Ok, so this apparently is a thing. Some people add vinegar to their honey roasted carrots. I think the reason they do that is the cut through some of the syrupy-ness of the honey glaze. That’s definitely not necessary for this recipe. The soy sauce does the same thing, while adding a wonder Asian twist to these roast carrots.
Variations of Honey Soy Roasted Carrots
As much as I love these Glazed Honey Soy Roasted Carrots, there are many ways to boost the flavor. We specifically left out garlic from this recipe, because there is likely garlic in rest of your meal. Sometimes you don’t want garlic in everything (said no Russian ever). Mixing in minced garlic and finely diced ginger pieces definitely gives a Chinese twist to your side dish. You can also make Honey Roasted Parsnips instead of carrots, or mix them together. Just remember to keep the carrots the same thickness. Finally, I garnish with fresh chopped parsley, or sesame seeds. Use black sesame seeds for a nice contrast.
One final suggestion, you can cover the Honey Roasted Carrots in foil in a smaller baking dish. This allows you to pour all the honey glaze over the carrots, allowing you to roast the carrots in more honey glaze goodness. Also helps me not to stress about the honey burning during the roasting process.

Honey Roasted Carrots with Soy Sauce
- 1 lb /500g carrots
- 2 tablespoons oil
- 2 tablespoons honey
- 2 tablespoons soy
- salt to taste
Preheat oven to 400°F/200°C. Line a baking pan with parchment paper.
Peel and trim the carrots leaves. If carrots are thick, cut in half to speed up the cooking time.
In a bowl, mix together oil, honey, soy, salt. Toss the carrots in the honey soy mixture to coat them.
Bake in oven for 25 to 35 minutes until they are tender. Roasting time depends on the thickness of the carrots. Remove and serve immediately.
