Everybody has great memories of kid's birthday party foods. It seems that Honey Joys are a staple at kids birthday parties and at school fetes, or bake sales. This Honey Joys recipe is super easy to make, and absolutely delicious.
Are Honey Joys Australian?
Yes. If you've never heard of Honey Joys you're probably from North America. That's because it was part of the Kelloggs marketing here in Australia for different uses for their cereals. This recipe is a classic Kellogg's recipe, found on the back of the box of your Kellogg's Corn Flakes, just like Rice Krispies Squares were advertised in North America. I suppose pre-internet, that's how cereal companies got us to use their recipes. I have an old Kellogs recipe for Caramel Rice Krispies which the kids also love eating.
When we moved to Canada, my wife shared this recipe with a few friends and they love it. I think it's quicker to make than Rice Krispies Squares, with an easier cleanup.
How to make Honey Joys
They're so easy to make. In a nutshell, melt the ingredients, add the cornflakes, then bake for 10 minutes. The original Honey Joys recipe used ⅓ cup sugar and 1 tablespoon honey, but I modified because I love more of a honey taste. Sugar is the ingredient that makes the Honey Joys hard and combined together. If you increase the honey but decrease the sugar, it will be too soft and fall apart. I don't love Honey Joys rock hard, but you can increase the sugar/decrease the honey if you like.
This recipe will make 24 individual small cupcakes, which you need to prepare both tins right away (I used 12 jumbo cupcake tins). The corn flake mixture will set quickly, if you bake one cupcake tin at a time, so prepare both.
How Long will Honey Joys last?
Truthfully, not very long at my house! If you place them in an airtight container, they will last 2-3 days in the fridge. Thats' only true if your kids don't know they are there, otherwise they won't last the day!
There are different variations of Honey Joys. I've seen people make it with popcorn, with Cocoa Pops, Special K, Rice Krispies, added marshmallows or sprinkles. I've even heard of someone replacing the Honey with Maple Syrup. So feel free to experiment, but first try this original honey treat.

Ingredients
- 6 tablespoons /90g butter
- ¼ cup sugar
- 2 tablespoons honey generous tablespoons
- 4 cups cornflakes
Instructions

Preheat oven to 150°C/300°F

Prepare 24 muffin tins lined with small paper muffin liners.

In a large saucepan, melt butter, sugar and honey together until frothy.

Add cornflakes to the hot butter mixture and mix until coated.

Quickly spoon into prepared muffin tins and bake for 10 minutes.
