Australian Cheesymite Scrolls

Ingredients

Yeast Dough recipe

  • 1 ⅓ cup milk lukewarm
  • 1 teaspoons salt
  • 1 teaspoon sugar
  • 1 tablespoon Instant Dry Yeast
  • 4 cups flour
  • 1 egg
  • 3 tablespoons melted butter can substitute with vegetable oil

Filling ingredients

  • 2 cups grated mozzarella and cheddar cheese mixture
  • 3 tablespoons Vegemite
  • milk for brushing top of Cheesymite Scrolls

Instructions

Yeast Dough

  • Proof Yeast - mix yeast with ½ lukewarm milk and sugar and salt. Whisk in 2 tablespoons of flour allow to activate for 15 minutes (you will see bubbles and foam).
  • Mix - in a large bowl, add remaining flour, milk, egg and melted butter. Pour in the activated yeast mixture and stir until it forms a shaggy ball.
  • Knead - on a floured surface knead for about 5 minutes until smooth and elastic
  • Rise - place in oiled bowl, cover with cling wrap and a kitchen towel. Place in warm spot. Takes about 1½ hours to rise. Punch down and gently knead before using.

How to Make Cheesymite Rolls

  • Prepare Dough - Preheat oven to 375°F (190°C). Roll out the dough on a floured surface into a rectangle, approximately 16x20 inches.
  • Spread Vegemite and Cheese - Spread the Vegemite thinly over the yeast dough, leaving a 1cm border around the dough, Vegemite free. Sprinkle the cheese over the Vegemite.
  • Roll and Cut - Roll up the yeast dough firmly until you have a cheesy dough log. Start rolling dough from the long edge, not short edge. Using a sharp knife, cut every 3cm (1 inch) along the dough log. Place the scrolls on a greased baking sheet or parchment paper.
  • Rise - Cover loosely with cling wrap and place in a warm place for about 45 minutes, allowing the dough to rise further. This is optional, especially if you're pressed for time, but makes for a better scroll.
  • Bake - Brush the Cheesymite Scrolls with milk. Put a pinch of cheese on top of the Cheesymite Scroll. Bake for about 20 minutes, or until they are golden brown. Allow to cool and enjoy.
